I made this dressing after trying a delicious turkey wrap that had a similar dressing inside. This dressing is great as a veggie dip, on sandwiches or on top of a salad. It's not particularly healthy (which is probably why it tastes so great), but is definitely worth trying!
Creamy Pesto Ranch Dressing
1/2 C. buttermilk
3/4 C. mayonnaise
1/4 C. parmesan
2-3 tsp. pesto
1/2 tsp. pepper
salt to taste
Directions:
In a liquid measuring cup or small bowl, whisk together all ingredients. Add more buttermilk to think the mixture or more mayonnaise to thicken the mixture, if needed. Taste and add more pesto, salt, or pepper, if desired.
Makes about 1 1/4 C. dressing

Note: If you don't want to buy a big jar of pesto from Costco and be eating pesto with every meal to try to finish it off before it goes bad, Target and other grocery stores sell a smaller jar of Classico brand pesto that tastes great and is a more manageable size for recipes like this one that calls for only a couple teaspoons of pesto.
